Description
Ca n’Estruc has been making wine on the south-eastern slopes of Montserrat since the 16th century, but the organic white wine project /BI/ came about much later, in 2014, when Anna Martí decided to do the exact opposite of what was ‘easy’: to return to the essence and step aside. Instead of oenological tweaking, she let the land, the grapes and time take the lead. They say the idea took shape after a harvest in which, with the perfect grapes, she chose not to “correct” anything: neither aromas, nor texture, nor haste. A bold move, almost counter-intuitive today, and one that defines this Ca n'Estruc BI Xarel.lo (100% Xarel.lo) as a wine of the land, not of the laboratory. Here, Montserrat leaves its mark: gravel and red clay, bright days, cooling nights, and that stony energy that seems to rise through the roots. Vineyards cultivated using organic and biodynamic viticulture, so that the landscape speaks unfiltered.
Production
At Ca n'Estruc BI Xarel.lo, the grapes are handled with care and a short maceration with the skins is sought to extract vigour and structure without losing sharpness. Fermentation begins with indigenous yeasts and takes place in a 1,700-litre concrete vat: this does not impart aromas, but it does round out the wine with subtle micro-oxygenation and a natural movement of the lees. Then, ageing on fine lees for 4 to 6 months refines the palate: more tension than richness, more nerve than volume. It is bottled when the wine ‘stands on its own’, without the need for artificial intervention.
Taste
In Ca n'Estruc BI Xarel.lo, the nose is not overpowering: it is serious and clean, with green apple, dry grass and a hint of citrus reminiscent of lemon zest; underneath, a touch of minerality that makes it understated and highly food-friendly. On the palate it is juicy but straightforward: the fruit leans more towards pear and citrus than towards the tropical, and the texture—thanks to the concrete and lees—feels silky and enveloping, without losing its freshness. The finish leaves a sensation of purity, with that addictive combination of tension, a hint of saltiness and Mediterranean elegance that calls for fish, seafood, rice dishes or simply another glass.
