Description
Toto Barbadillo is a sparkling wine from Cádiz, made mainly from the Palomino grape variety and complemented with Chardonnay. This wine is produced in albariza soils, characteristic of the Marco de Jerez region, where the grapes ripen well thanks to the specific climatic conditions of the area.
Winemaking
The grapes are harvested by hand in mid-August. After fermentation in stainless steel tanks at 15 ºC for 15 days, the second fermentation takes place in the bottle, following the traditional method, which provides an ageing time of 20 months. This is a Brut Nature wine, with no added sugar, which stands out for its purity and dry style.
Taste
Toto Barbadillo has a bright pale yellow colour, with fine bubbles that provide great visual elegance. On the nose and in the mouth, there is a perfect integration of finesse and freshness, being a very dry wine that highlights the chalky character of the soils from which it comes. Freshness is a key element, probably attributed to the albariza soils, which give the wine a mineral and refreshing profile. Ideal with seafood, fish and exotic dishes such as sushi, it also pairs perfectly with nut or chocolate based desserts, enhancing its gastronomic versatility.
