Description
Altura Rosso Saverio is a wine that comes from Isola del Giglio, an island off the coast of Tuscany. This wine is the result of a winemaking tradition that has been maintained over the years on the island. It is made from a wide variety of red grapes and a part of white grapes. The main grapes used in its production are: Sangiovese, Garnacha, Malvasia and Moscatel Negra, Trebbiano and Vermentino Negro.
Winemaking
The grapes are harvested by hand, respecting the different ripening times for each variety. Once harvested, they are left to rest in the shade, allowing for a slight dehydration. Subsequently, all the grapes are crushed together and fermented with indigenous yeasts with the skins and stems. A distinctive feature of Rosso Saverio is that it remains in contact with its skins for a long time. Even after the end of fermentation, the wine does not separate from its skins, remaining in contact with them for several months. This technique gives the wine exceptional longevity and it can be aged for long periods, although it shows signs of maturity after a couple of years.

Altura Rosso Saverio is a wine that dazzles with its complexity and richness of flavours. It has an incredibly beautiful and complex nose, with notes of smoke, cured meat, cheese, tobacco and candied plum, all enveloped by a volcanic salinity.
