The 2021 Aloers is pure Xarel.lo from limestone soils and has a marked Mediterranean character. It has 11.5% alcohol with a low pH of 3.02 and 5.7 grams of acidity. The full clusters had a short maceration, and the juice fermented with indigenous yeasts. There was bâtonnage for one month and then another six months of élevage without stirring the lees. It's very expressive of yellow fruit, with more complexity and depth, with some skins and lees to give it more on the nose and more density on the palate. It has freshness, hints of talcum powder and dry flowers, with the freshness from the 2021 vintage, a dry year after a rainy one. It finishes very tasty and makes you salivate, with an almost salty touch. 9,0000 bottles produced. It was bottled in June 2022.
