Description
In the heart of the Ribera del Duero, where the altitude is almost 800 metres above sea level and the extreme climate is law, Áster comes to life as a statement of character. The winery, located in Anguix (Burgos), works exclusively with its own grapes from its plots Fuentecojo, La Cueva and Otero Joven, settled on silt-loam soils that imprint finesse and structure to the Tinta del País. Since its beginnings, Áster has maintained a clear philosophy: to prioritise excellence over volume, making wines only when the harvest is up to standard.
One of its firmest -and most courageous- decisions was not to depend on external suppliers or irregular vintages. The winery waits, selects and acts with surgical precision, always with an eye to the purest expression of the terroir.
Winemaking
Áster Crianza is harvested by hand, in 20 kg crates, followed by a double selection process (optical and manual) that guarantees only the healthiest and ripest grapes. After 15 days of fermentation and maceration, Áster Crianza undergoes malolactic fermentation in French oak barrels, with weekly bâtonnages for two months. It then spends 16 months in French oak (75% new), refining its structure and complexity. Three traditional rackings were carried out before bottling in July.
Taste
Áster Crianza has a deep cherry red colour and a precise nose: blackberries, black cherry, ripe plum, on a background of sweet spices, cocoa, clove and a subtle note of incense. The palate is elegant and restrained, with silky, well-integrated tannins. The ageing adds volume without stealing the limelight from the fruity character. Notes of liquorice, roasted coffee and a slight mineral background round off the profile. Its firm, balanced acidity lengthens the palate, leaving a persistent, fresh finish.
