Description
UBE Paganilla is an exceptional wine that captures the essence of the Jerez terroir with impressive authenticity and depth. This wine is made exclusively from Palomino grapes from two distinct plots within the Pago de Paganilla. One of these plots is located at the top of a hill on Tosca de Barajuela soil, while the other is situated in the southern corner on Tosca Cerrada soil. This location offers a perfect balance between the freshness of the coastal pagos and the density of the more inland sites.
Elaboration
The grapes are harvested by hand at the beginning of September. The grapes are whole cluster pressed in old sherry butts of 1,000-1,250 litres. Fermentation takes place spontaneously without temperature control and the wine matures in the same butts for 9 months. During this time, an initial veil of flor develops and lasts for several months, providing a partial biological ageing that adds complexity and character to the wine.
Taste
In the glass, UBE Paganilla has a metallic yellow colour, a sign of its unique ageing. The nose is of medium-high intensity, displaying aromas of hydrocarbons, yeasts, white flowers and lactic touches together with nuances of toasted corn. On tasting, the wine reveals pronounced acidity and a glyceric mouthfeel, distinguishing itself from other wines of the region by its structure and medium persistence. This sensory profile makes it not only a reflection of its microclimate and soil, but also an expression of the philosophy and meticulous work of winemaker Ramiro Ibáñez, who seeks to revive Jerez's winemaking traditions while exploring the full potential of its famous albariza soils.
