Cold soaking for 10 days in oak casks previous spontaneous fermentation with indigenous yeasts. Aged for 18 months in 2.500-3.500 liter oak foudres and 24 months in bottle. Bottled without sulphites.
Description
Radikon Pinot Grigio is a white wine, with skin maceration, with Venezia Giulia IGT denomination. It is made exclusively with the Pinot Grigio grape variety, representing 100% of its composition.
Winemaking
The destemmed grapes are placed in truncated cone-shaped oak vats with a capacity of 25 and 35 hectolitres. Here, the grapes remain for 8 to 14 days, during which time part of the spontaneous fermentation takes place in direct contact with the skins. This process has no temperature control and, to ensure that the skins remain submerged during maceration, between 3 and 4 manual punch-downs are carried out daily. Once this stage is completed, the wine is racked and aged in 25 and 35 hectolitre oak barrels for approximately 18 months. This process culminates with a 2-month resting period in the bottle, without any kind of clarification or filtration.
Radikon Pinot Grigio has a coppery colour that tends towards onion skin, a distinctive characteristic. The nose is complex and persistent, with notes of fruit, particularly red fruits such as cherries. On the palate, it is long, persistent and savoury, with a slightly tannic touch that adds elegance and a mineral character.
