Description
Benoît Marguet does not make champagne. He grows it. He breathes it. On the pure chalk soils of Cramant - one of the jewels of the Côte des Blancs - Marguet is guided more by the lunar calendar than by oenological manuals. Heir to a centuries-old family tradition, he took a radical turn in 2009: he embraced biodynamics in the heart of Champagne, farming with animal traction and without herbicides, respecting the natural rhythms of the vineyard. In his vision, wine is not "made", it is accompanied. Thus Marguet Cramant Grand Cru 100% Chardonnay is born, coming exclusively from the Cramant Grand Cru, where the chalky subsoil imprints a tension and minerality that is difficult to replicate. This wine does not seek to please everyone: it is a declaration of principles. Zero dosage. Zero concessions.
Winemaking
Each bunch destined for Marguet Cramant Grand Cru is hand-picked at the right moment. In the cellar, Marguet avoids pumping over; the grapes descend by gravity. Fermentation starts with indigenous yeasts in used oak barrels, without corrections or additives, allowing the terroir to speak with its own voice. Ageing on the lees lasts over 48 months, with no sulphur or sugar added at disgorging.
Taste
Marguet Cramant Grand Cru is filled with fine bubbles that emerge slowly. The first contact is precise, linear, almost cutting: a lively acidity reminiscent of lime, grapefruit and dried citrus zest. Notes of wet chalk, seashells and a smoky echo reveal the soil from which it comes. Subtle nuances of dried flower, salted butter, bread crust and a hint of spicy vanilla follow. This is not a wine of exuberant fruit: its profile is austere, cerebral, with a saline energy that runs across the palate like a sharp edge. On the palate, the texture is taut, compact, with a structure sculpted by acidity and long ageing. The finish is dry, persistent, with an aftertaste of lemon zest and a lingering mineral whisper. Ideal for lovers of pure, upright, unadorned Champagne. Perfect with oysters, sashimi or simply contemplated with time and silence.
