Description
Le Coste Paino is an aged white wine produced by the Le Coste winery mainly with grapes of the Procanico variety in the Lazio region of Italy.
The grapes come from vineyards of approximately 50 years of average age grown at an altitude of 470 m above sea level and planted on volcanic soils. These soils are rich in iron and minerals which results in a fragrant and fresh wine.
Winemaking
The grapes from which this wine is made are cultivated using techniques derived from environmentally friendly agriculture where attention is paid to the needs of each plant and the use of chemical products is avoided.
The grapes were harvested from a selection of the most concentrated fruit from plants of various ages, with plants with a maximum of 3 bunches and small berries. The grapes were destemmed and spent three weeks macerating.
Alcoholic fermentation was carried out with indigenous yeasts in a truncated cone-shaped French oak foudre.
The wine was aged for 24 months in 500-litre oak barrels, plus 3 years in the bottle.
Taste
It is a sober, light wine. In the mouth it has a vibrant acidity and a pleasant and very fresh flavour.
