Description
L'Ether Créatif Tupi Jacaré is an ancestral sparkling wine (Pet Nat) made by Marina Santos and Israel Dedea in the Jura and Beaujolais regions of France. This wine is an authentic representation of natural viticulture, produced with grapes purchased in Violes (Côte du Rhône) from Domaine L'Odylée, grown organically.
Winemaking
The grapes, Grenache Blanc, are harvested by hand and destemmed before being pressed directly with a vertical hydraulic press. Alcoholic fermentation is spontaneous and takes place in tanks, finishing in the bottle without the addition of sulphites. Production is limited, with only 1,200 bottles available.
The name "Tupi" refers to a group of Brazilian indigenous languages, while "Jacaré" is an endangered animal, paying homage to the indigenous peoples who contribute significantly to the preservation of the planet's biodiversity.
