Grossot Chablis 1er Cru Vaucopin is an oenological gem that embodies the essence of the Chablis terroir. Produced by the Famille Grossot, a family with generations dedicated to viticulture, this wine reflects the passion and meticulous attention to detail that Jean-Pierre and Corinne, together with their daughter Eve, bring to each vintage. Located in the commune of Chichée, the Vaucoupin vineyard spreads out on a steep south-facing slope, whose vines, on average 50 years old, extract the mineral richness of a soil composed of limestone and clay. The Chablis region, famous for its Kimmeridgiano, brings a distinctive character to its wines, marked by minerality and freshness.
Winemaking
The winemaking process for Grossot Chablis 1er Cru Vaucopin begins with a manual harvest, ensuring that only the best grapes reach the winery. After gentle pressing in a horizontal pneumatic press, the must is slowly fermented at low temperature in stainless steel tanks, thus preserving purity and aromatic complexity. Ageing on the lees adds depth and a silky texture, while malolactic fermentation lends a fine smoothness that balances the wine's natural vivacity.
