Description
In the heart of Burgundy, Frédéric Cossard makes wines that defy orthodoxy. With no winemaking heritage or classical training, he entered the world of wine as an autodidact, convinced that less intervention meant more truth. His project, Domaine de Chassorney, was born out of a desire to let the grapes and the land speak without filters. And Frédéric Cossard Bedeau Bourgogne Rouge is one of his purest manifestos.
The wine comes from 40 to 50 year old Pinot Noir vines on clay-limestone soils around Volnay and Nuits-Saint-Georges, including a plot next to a church, origin of the name "Bedeau" (the sexton). A Burgundian irony for a wine that honours tradition, but expresses itself with irreverence.
Winemaking
The grapes for Frédéric Cossard Bedeau Bourgogne Rouge are harvested by hand at the end of September, with low yields (25 hL/ha). Vinification was done with whole bunches in semi-carbonic maceration for 14 days in wooden vats, followed by two months of natural fermentation with indigenous yeasts. Ageing was carried out for 11 months in 17 hL cement eggs, which favour micro-oxygenation without adding flavours, and then 4 months in stainless steel. No sulphites were added at any stage.
Taste
Frédéric Cossard Bedeau Bourgogne Rouge shows a light, veiled ruby, like a veil of mist over lively fruit. On the nose, an explosion of raspberries, sour cherries and violets, with an undertone of wet earth and iron. The palate is light, vibrant and subtly bitter, with fine tannins that add tension and a saline touch that lengthens the finish. An ethereal Pinot Noir but with a pulse, which does not seek to impress, but to seduce with honesty. Pure, free and essentially Burgundian, in its own way.
