Description
The Costadilà O-X wine is an exquisite creation that arises from the fusion of two different grape varieties: Pinot Noir and Glera.
Winemaking
Costadilà O-X is a frizzante rosé obtained by re-fermentation in the bottle. After the manual harvest, the Glera is immediately pressed, while the Pinot Noir macerates with the skins for a few hours. Spontaneous fermentation with indigenous yeasts is carried out in stainless steel tanks, followed by 3 months in steel tanks. Finally, it is bottled with the addition of must for the formation of foam and carbon dioxide.
Taste
In the glass, this vibrant wine has a slightly pinkish colour, with a subtle bubble characteristic of the prossec cabbage in the background. Again, it reveals floral and fruity aromas. On the palate, it is a sparkling wine with an elegant texture and fresh acidity, capable of evolving positively with time in bottle. It is ideal to drink with Iberian ham or clam risotto.
