The 2022 Côtes du Jura Savagnier is a ouillé (without flor) Savagnin from vines planted in the lieu-dit Savagnier in the village of Lavigny on marl soils in the 1990s. It fermented with indigenous yeasts and matured exclusively in stainless steel for 10 months. It is fresh and varietal, with 13.5% alcohol. It has purity of aromas and is stony and faintly reductive, with a flinty edge, nicely textured with a fine thread, integrated acidity and a dry, chalky finish. 6,000 bottles were filled in July 2023.

Description

The story of Berthet Bondet Côtes du Jura Savagnier begins at Domaine Berthet Bondet, founded in 1985 by Jean and Chantal Berthet Bondet, who took over an estate that had been dormant for more than half a century in Château Chalon, Jura. Committed from the outset to respectful viticulture, now certified organic, they cultivate their Savagnin with sensitivity and precision, convinced that the wine must reflect the character of their land. Berthet Bondet Côtes du Jura Savagnier comes from a single plot planted on Triassic marls, an ancient and austere soil that provides minerality and structure. The vines, which are about 20 years old, are cultivated with natural vegetation cover and alternate tillage of the vines. In an unusual decision in the region, they avoided the use of barrels or oxidative ageing, opting for the most direct and fresh expression of the terroir.

Winemaking

The grapes for Berthet Bondet Côtes du Jura Savagnier are harvested by hand, preserving their integrity. Fermentation takes place after a gentle pressing of the whole grapes, without destemming, and is carried out with indigenous yeasts. Ageing takes place for 10 months in stainless steel tanks on fine lees, without contact with oxygen, in order to maintain the liveliness and purity of the Savagnin. There is no wood, no veil, no artifice. Just the grapes, the soil and time.

Taste

On the nose Berthet Bondet Côtes du Jura Savagnier is clean, with notes of tense citrus (lime, grapefruit), crisp white fruit and a subtle hint of wet stone. When oxygenated, a slight nuance of fresh almond and white flower appears. On the palate, it is dry, linear, saline and vibrant. The acidity is precise, cutting, but well integrated. The finish is long, with a mineral aftertaste and a subtle nutty echo. A wine with a serious character, one of those that do not seek to please everyone, but to excite those who are looking for truth in the glass. Ideal with seafood, ceviche or cured cheeses.
