Description
Antidote is a red wine produced by Bertrand Sourdais in the Ribera del Duero Soriana, an area distinguished by its unique climatic and geographical characteristics. This wine is made from 100% Tinto Fino (Tempranillo) grapes from old vines, between 80 and 100 years old. The vineyards are located at an altitude of 950 metres, which provides freshness and a differentiated expression compared to other areas of the appellation. Moreover, most of the vines are grown organically, respecting the environment and traditional practices.
The soils on which the vines are planted are a combination of pebbly sands (50%), calcareous sands (20%) and clays (30%), which contributes to the complexity and structure of the wine. The grapes are harvested by hand between the end of September and the beginning of October, carefully selecting the grapes.
Winemaking
The grapes are completely destemmed before fermentation, which lasts 6 days at a controlled temperature of 25°C. The wine is then fermented at a controlled temperature of 25°C. Subsequently, malolactic fermentation takes place in tanks. Ageing is carried out for a period of 8 to 10 months in 600-litre French oak barrels, with a percentage of new wood varying between 16% and 25%, depending on the version of the wine. This process helps to refine the wine without masking its fruity character, allowing for a more balanced evolution. Before bottling, the wine is lightly filtered to preserve its organoleptic qualities.
Taste
In the mouth, Antidote is distinguished by its fresh and silky balance, thanks to the altitude of the vineyard, which softens the most extreme climatic conditions. It has an expressive nose of ripe fruit, such as plums and blackberries, with light spicy touches and a background of fine wood that is subtly integrated, without detracting from the fruit. It has a medium structure, with fine, well-integrated tannins, giving it a silky texture and a pleasant persistence on the palate. On the palate, the wine is juicy, floral and well-balanced, with notes of mild spices, liquorice and a smoky touch, derived from its ageing in French oak. All this makes it an accessible wine, but with enough complexity to be enjoyed on different occasions. It is best served at a temperature between 14 and 16 °C, and has a cellaring potential of 3 to 5 years.
This wine is ideal for pairing with red meats, white meats in sauce, Iberian sausages, and stewed mushrooms, highlighting its versatility and ability to accompany dishes with intense flavours without losing its fresh and refined character.
