Description
To talk about Viña Pedrosa Cepa Gavilán is to discover a wine with essence and character. It is the youngest of the family, but no less fascinating for that. This crianza is born in the vineyards of the Pérez Pascuas winery, a name that resonates strongly in Ribera del Duero.
Made from 100% Tinto Fino (the Tempranillo of the area), it comes from vines over 20 years old, bush-trained at an altitude of 840 metres. Imagine it: a landscape of gentle hills, bathed by the Castilian sun, where the cool wind balances the ripening of the grapes. The clayey soil plays a key role, giving structure and depth to the wine.
Winemaking
At Viña Pedrosa Cepa Gavilán the grapes are harvested by hand, a detail that makes the difference. It is not the same to select bunches of grapes by hand, with patience and care, as it is to pick them en masse with a machine. The wine then rests for 12 months in French and American oak barrels, followed by another year in the bottle. Sufficient time to round out its character without losing its freshness.
Taste
From the first sip, Cepa Gavilán grabs you. Its intense cherry red colour announces what is to come: an explosion of black fruit, such as blackberries and ripe plums, intertwined with subtle hints of vanilla and a spicy background. On the nose, there is something evocative, almost nostalgic: a whisper of undergrowth, a memory of noble wood.
On the palate, Viña Pedrosa Cepa Gavilán is enveloping and silky, with a touch of juiciness that makes it irresistible. Its structure is firm, but without losing agility. The tannins, well worked, provide an elegant and persistent finish, one of those that invite you to continue exploring the glass.
