Description
When you pour a glass of Romate Fino Marismeño by Bodegas Sánchez Romate, it is like opening a window onto the Atlantic. Its saline aroma, its sharp freshness and subtle elegance immediately transport you to the white lands of Jerez, where the sun and the west wind write the history of each vine.
This treasure of the Marco de Jerez is born from the Palomino Fino grape, grown in the legendary albariza soils of the Balbaína estate. Imagine a white, porous soil, capable of retaining moisture like a sponge and nourishing the vines even in the driest summers. That is the magic of albariza: the secret of the great finos.
Winemaking
The ageing for Romate Fino Marismeño is carried out in American oak casks, following the traditional criaderas y solera system. But here's the trick: for more than four years, the wine rests under the velo de flor, a layer of yeasts that protects it from oxygen and gives it its dry and vibrant character. It is an almost magical process, where time and nature do their work without haste, but without pause.
Taste
From the first sip, Romate Fino Marismeño awakens the senses with its unmistakable personality. Its straw yellow colour with golden glints reflects the light with subtle elegance, but it is on the nose where the real experience begins: notes of almonds, freshly baked bread and a saline touch reminiscent of the sea breeze.
On the palate, it is an explosion of freshness. Dry, light and with that delicate bitterness that makes it so special. It is the kind of wine that calls for an accompaniment: a tapa of Iberian ham, some toasted almonds or even some grilled prawns. Serve it chilled, between 7 and 9 °C, and let it work its magic.
