Description
The Pàcina Donesco wine comes from the winery's youngest vineyards, which are more than 10 years old. These vineyards have been particularly influenced by climate change, which has led to the grapes being more exposed to seasonal variations. This exposure has resulted in a wine with unique and distinctive characteristics.
The vineyard covers 2 hectares with vines up to 15 years old. The soil in which these vines grow is Tufo di Siena, a mixture of sand and clay. The production is 6,000 kg of grapes per hectare, and the grape variety used is 100% Sangiovese.
Winemaking
The winemaking process of this wine respects ancient traditions. Spontaneous fermentation is carried out and ageing takes place in cement and stainless steel tanks for approximately two years. It is important to note that the wine is not filtered and only a small amount of sulphur is added.
