Description
Mataburro Otium wine is a unique expression of viticulture, combining tradition and modernity. This wine, made mainly from the Grenache variety, comes from vineyards more than 80 years old in the Rivesaltes district. These ancient vineyards, planted by Laurent's grandfather in 1949, are a testament to the history and quality that long-lived vines can offer.
Winemaking
The winemaking of Mataburro Otium is a careful and detailed process. Laurent Roger and Melissa Ingrand, the winemakers, made three passes through the vineyard on different days, looking for the optimum ripeness of the grapes. Each harvest day, the grapes are macerated in separate tanks for 4, 5 or 6 days. This short maceration technique is used to avoid excessive extraction and to keep the wine less tannic. The ageing was carried out in stainless steel tanks, which helps to preserve the purity and freshness of the wine.
This wine has no additions, has 12.5% alcohol, no sulphites are added, and it is not filtered or clarified. The combination of these characteristics makes it an exceptional wine, reflecting the dedication and respect for the land and the tradition of its creators.
Taste
Mataburro Otium is distinctive and captivating. It is characteristically light and ethereal, with a clarity and cleanness on the palate that makes it absolutely delicious. Despite its lightness, the wine has an interesting complexity. On the nose, it is somewhat funky, but on the palate it mellows noticeably. It is lighter in colour than natural Jura wines, offering a lighter and more elegant version of a good Jura Ploussard. The flavour profile includes spicy and mineral notes, with a fairly neutral character that makes it very drinkable and interesting.
