Description
Mataburro Memo wine is a unique expression of viticulture, standing out for its composition and winemaking process. This white wine, created by Laurent and Melissa, is made from 100% Macabeo, a grape variety that brings distinctive characteristics to the wine. The vines from which these grapes are obtained are remarkably old, 70 years old, and grow in a clay and pebble soil in the village of Espira-de-l'Agly.
Winemaking
The production of Mataburro Memo involves a short maceration of 6 days, although this may vary depending on the year. This process is carried out in stainless steel tanks, a technique that enhances the qualities of the Macabeo grape. In addition, it is important to mention that this wine has no additions, including no added sulphites, and is not subjected to fining or filtration. Its alcohol content is relatively low, at only 12%.
Taste
Mataburro Memo is characterised by a complex and attractive flavour profile. It has notes of quince, straw and beeswax, with a slightly smoky touch. Tropical fruits such as papaya and passion fruit also make an appearance, adding an exotic dimension to the palate. On the palate, there is a slightly pearly texture, with flavours of ripe peach, straw, smoke, mineral, honey and tangerine. This wine stands out for its long persistence, well-balanced acidity and present but discreet tannins.
