Description
There are wines that seem to walk barefoot on the land where they were born, and L'Octavin Corvées de Trousseau is one of them. Sourced from the "Les Corvées" plot, very close to Montigny-les-Arsures - the ancestral heart of Trousseau -this wine comes from Triassic marl soils, rich in clay and marine fossils, which provide a precise and raw minerality. The project of Alice Bouvot (soul of L'Octavin) is an exercise in courage and radical coherence. For years, she has been cultivating according to organic principles certified by ECOCERT and in DEMETER biodynamics, without concessions, without artifice. The grapes are harvested by hand, guided by the pulse of the moon and the exact ripeness of the fruit. It is said that in one vintage she risked the entire harvest waiting for the exact pause between two rains, convinced that an honest wine is not rushed.
Winemaking
There is no room for tricks here. L'Octavin Corvées de Trousseau is made from hand-stemmed Trousseau grapes, which undergo a prolonged semi-carbonic maceration for two months, where the juice and skins merge in a slow, lively infusion. Spontaneous fermentation is only with indigenous yeasts, with no temperature control or additives. There is no added sugar, no technical corrections, no sulphur at any stage. The pressing is very gentle, barely a caress. The result is bottled in June, without filtration, without fining, with a light alcohol profile: which legally prevents it from carrying the Arbois name, but frees it to speak with its own voice.
Taste
Visually, L'Octavin Corvées de Trousseau presents itself as a pale, cloudy red, reminiscent of subtly macerated natural wines. On the nose, it opens with notes of wild strawberry, raspberry, some dried flower and a vegetal background reminiscent of fresh stalks. With air, a more earthy layer appears, with notes of damp leaves, wet stone and a hint of subtle spice. On the palate, the lightness is deceptive: the wine is vibrant, with a lively and direct acidity that gives it tension and nerve. The tannin is barely perceptible, just enough to support the wine's line without detracting from its fluidity. Pure flavours of crunchy red fruit, a mineral echo marked by marl, and a long, dry finish with an aftertaste of stone and sap. L'Octavin Corvées de Trousseau is an ethereal, almost ghostly wine, but with character, which speaks more of soil and intention than volume. Pure expression of the freest Jura.
