Description
In the stony heart of Valdeorras, where slate and granite mark the character of the land, the Guitián family made a brave decision in the early 1990s: to bet on Godello, a then forgotten and underestimated variety. While others were pulling up vines in search of more "profitable" varieties, they believed in the potential of this grape to reflect the soil, climate and work. It was an intuition born after a trip to Burgundy: "If one variety expresses so much there, why not here?
This is how Guitián Godello was born, a white wine that today is the undisputed benchmark of the Valdeorras appellation. Sourced from their own vineyards in A Rúa, grown on poor, stony soils, with an exposure that guarantees slow ripening and cool nights, this wine embodies a philosophy of minimum intervention and maximum authenticity.
Winemaking
The grapes are harvested by hand into crates at dawn to preserve their freshness. After destemming and gentle crushing, a cold pre-fermentation maceration is carried out, which extracts aromas without oxidation. The must is obtained by pneumatic pressing at low pressure and undergoes static clarification to eliminate impurities.
Alcoholic fermentation is carried out in stainless steel tanks at controlled temperatures to preserve the varietal profile. The wine is then left on its lees, with its fine lees, which adds volume, unctuousness and complexity. Finally, it is clarified, stabilised, filtered and bottled, with a minimum ageing period of two months in the bottle before release.
Taste
Guitián Godello is a sober, elegant wine, without artifice. On the nose it displays tense citrus, lemon peel, fresh fennel, hints of white flowers and an evident chalky minerality. It does not seek to impress with aromatic exuberance, but with precision.
On the palate, Guitián Godello is straight, sharp, with lively acidity and silky texture thanks to the work on the lees. Notes of grapefruit, green apple and raw almond appear, all enveloped in a salinity that lengthens the passage and cleanses the palate. The finish is long, with echoes of scrubland and wet stone.
