The young and unoaked white 2023 Vino Blanco is pale and balsamic. It's a blend of 70% Godello and the remaining 30% other whites—Treixadura, Albariño, Torrontés and Loureira—from different plots in different villages with different soils, expositions and altitudes, trying to replicate the whites from the past, which were always blends. It's still very young, undeveloped and balsamic with marked notes of bay leaves, and it has a savory palate with a velvety texture. It is juicy and structured but keeping very good freshness and balance. It has a moderate 12.5% alcohol and a pH of 3.18 with 6.65 grams of acidity. It finishes with a pleasant bitter twist. 10,000 bottles were produced. It was bottled in May 2024.

Description
Pedro Rodríguez was not born in a winery, but perched on a slate hillside, among the impossible terraces of Amandi, in the heart of the Ribeira Sacra. His family has been working these heroic terraces overlooking the river Sil for generations, but it was in 1991 that they founded Adegas Guímaro - " rebel " in Galician - and began to bottle the harsh, luminous character of these lands. Pedro has been faithful to a philosophy of minimal intervention, opting for indigenous yeasts, clean vinifications and an honest interpretation of the vineyard. While others sought modernity, he decided to return to his roots.
Guímaro Godello comes from old vineyards planted on slate soils at 300-350 metres above sea level. The vines are more than half a century old and sink their roots into the rock, seeking freshness and structure. Although it is mainly Godello, there is a small presence of other local white varieties, like an echo of biodiversity that enriches the wine without making it the protagonist.
Winemaking
The grapes are harvested by hand, with the same care with which ripe fruit is picked while still warm from the sun, as if each cluster could be broken by the breath. The fermentation of Guímaro Godello is carried out in stainless steel tanks, with indigenous yeasts. Pedro blocks the malolactic fermentation to preserve the natural tension of the wine. It then rests on its fine lees before bottling without fining or filtering, keeping its purest character intact.
Taste
Guímaro Godello is a sharp, mineral white. On the nose, it offers notes of lime, green pear and a salinity reminiscent of wet stone. There is a herbal background of fennel and white tea, which adds complexity without detracting from its freshness. The palate is dry, direct, with a vibrant acidity that defines its structure. The fruit is restrained, elegant, with echoes of ripe citrus and a long finish where slate and bitter almond leave their mark. This is not a complacent wine, but one that demands attention and rewards with authenticity. A Godello with nerve, deeply Galician, rebellious in its essence.
