Description
Fento Tinto represents the essence and tradition of the Rías Baixas. This wine is composed of a blend of native Galician varieties: 83% Sousón, 9% Mencía, 5% Espadeiro and 3% Pedral. All these varieties come from the most inland sub-zone of Rías Baixas, the Condado de Tea.
Elaboration
Fento Tinto is a reflection of the dedication and passion of Eulogio Pomares, who leads the Fento Wines project. This wine is the result of natural viticulture combined with innovative winemaking techniques. After manual harvesting, the grapes are destemmed and fermented in a stainless steel tank at a controlled temperature of 22 ºC for approximately 15 days. Once the alcoholic fermentation is finished, the wine is pressed and transferred to an ageing tank where it undergoes malolactic fermentation. The wine is aged for about 8 months in stainless steel tanks and finally bottled after stabilisation and filtering.
Taste
Fento Tinto has a bright violet red colour, clean and brilliant. On the nose, it offers a medium-high intensity, highlighting wild red fruits such as blackberry and raspberry. On the palate, it is silky and direct, with a very well-integrated citric acidity that makes it fluid and very silky. It is ideal for pairing with dishes such as steak tartar, pickled partridge or rabbit and Asian cuisine.
