The grapes for the 2023 Palo Blanco were harvested earlier than ever, picked even earlier than the grapes from Taganana. It was a warm year, but the wine feels more like it's from a cool climate; it has a moderate 11.5% alcohol and is volcanic and less reductive than in previous years, fine-boned and sharp, with a vibrant palate, effervescent acidity (7.1 grams and a pH of 3.05) and a dry chalkiness that gives it salinity. It's approachable but should also age in bottle. 13,000 bottles produced. It was bottled in July 2024.

Description
The wine Palo Blanco de Envínate is a wine that stands out for being a liquor with a strong and different personality. It owes its name to an area in the village of Los Realejos, where the Listan Blanco grape has been produced in plots at 500 and 850 metres above sea level. It is a fresh wine, which stands out for its character, freshness, acidity and aromas of fruit and floral notes.
Winemaking
For the production of this white wine, the grape bunches are pressed whole and the juice is left to settle. It is then fermented in concrete tanks, where it is left to settle with yeasts from the grapes themselves. This process is carried out without temperature control.
This wine has the special characteristic that it does not undergo malolactic fermentation. Then, the maceration process is carried out in oval oak barrels for 12 months to complete the process with the bottling of the wine.
It is a wine with an alcohol content of 11.5%.
Taste
The taste of this wine denotes its Atlantic character, saline and with hints of wet stone. Its specially selected ingredients stand out, the Listán Blanco grape, some fruits and aromatic herbs.
It isa dry wine, balanced, concentrated, spicy but very easy to drink. Its aroma reminds us of the floral perfumes of fruit, with mineral notes, spicy nuances and hay.
