Description
Dominio de Tares Godello Fermentado en Barrica is a white wine made from the single varietal Godello by the Domino de Tares winery in the DO Bierzo.
The grapes for this barrel-fermented white wine come from different vineyards planted 60 years ago and grown in goblet-trained vines at an altitude of 700 metres above sea level, with moderate undulations.
These vineyards are planted on a soil containing clay, limestone, slate and shale, which is fertilised with sheep manure.
Winemaking
The grapes are harvested by hand, cluster by cluster, at their optimum ripening point. On arrival at the winery, once destemmed without crushing, it is fermented with its own and added yeast.
The malolactic fermentation is carried out 100% in American barrels with a racking in the waning moon. Ageing is done for 6 months in 500 litre French oak barrels with a minimum of 3 extra months in the bottle.
Taste
Dominio de Tares Godello Fermentado en Barrica shows an intense and complex herbal aroma. In the mouth it is dense, with a fresh and balanced acidity, silky tannins and mineral aftertaste.
