Prefermentative skin soaking for 5 days with whole grapes (30%). Fermented with indigenous yeasts and skin soaking during 12 days. Aging on lees for 4 months in stainless steel tanks. Bottled unfined, unfiltered and without added sulphites.
The Cosmic Constel.lació wine is not only a product of the processing of different types of grapes, but it is born to pay tribute to all the native varieties that were recovered and planted in a new plot.
With grapes such as white, black and grey carignan, grey grenache, white grenache, white grenache and muscat de alexandía, the diversity was balanced to create an exclusive wine that invites you to taste a new experience with a local flavour.
The vineyards are located at 300 metres above sea level, with sandy granitic soils, and where of course techniques are applied that respect the philosophy of organic farming.
In addition to considering the lunar phases for the cultivation and harvesting of these grapes, the intervention of chemical products or machinery on the fruit is minimised. So it is carried out manually, ensuring that the grapes reach their optimum moment of ripeness.
They are then taken to the winery to macerate with skins for at least 5 days. After this phase, 30% of the fruit is pressed and the rest is trodden with the feet. It is then macerated for 12 days and the fermentation process with indigenous yeasts begins. Stainless steel tanks are used for this last phase.
Finally, the wine is aged on its fine lees for 3 months and then bottled without fining or filtering.
Cosmic Constel.lació wine has a particular taste of red fruits with a high level of acidity and lots of tannins. It is a long-lasting wine that brings freshness with every sip.
