Description
Circe Verdejo is a white wine made exclusively from Verdejo grapes from old vines located in the Segovian villages of Aldeanueva, Moraleja, Codorniz and Santiuste. These vines, which in some cases are over 100 years old, grow on sandy soils with a layer of clay at depth and pebbles on the surface, which guarantees optimum drainage and moisture conservation. The extreme climate of the plateau, with very cold nights even in summer, gives the grapes a characteristic freshness. This wine is produced by the Avelino Vegas winery, a family business founded in 1950 in Segovia.
Winemaking
The vinification of Circe Verdejo includes a cold maceration to enhance the varietal aromas, followed by a controlled fermentation at low temperature (12 ºC). Subsequently, the wine rests on its fine lees, which gives it a distinctive unctuousness on the palate.
Taste
The taste of Circe Verdejo is fresh and sweet. On the nose, it displays aromas of exotic fruits such as pineapple, along with notes of white flowers and hints of fennel and apricot. On the palate, the entry is smooth and silky, with a perfect balance between acidity and sweetness. Hints of sweet apple and citrus are perceived, complemented by a perfumed and very long aftertaste. Ideal with appetizers, fish, seafood and foie gras, it is recommended to be served at a temperature between 6 and 8 ºC.
