I tasted three ancestral sparkling wines from 2019, all waiting to be disgorged in a couple of months, after which they need two to three months in bottle to integrate the bubbles. The 2019 Nieva York Pét-Nat, which was the first Gozalo produced in 2016 (after trials that started in 2014), was picked early in a very warm and dry year. Instead of just getting rid of the 'unripe' grapes for his other wines that he would have to discard, he uses them to make these wines, so quantities can vary widely. It has a very appley nose, very primary and fresh, a wine of tension—remarkable in a warm year—designed to be enjoyed in the warm-weather seasons. In 2019, there 7,200 bottles of this.
