Description

On the chalky slopes of Ambonnay, where the chalky limestone emerges like white veins under the skin of the vineyard, Benoît Marguet cultivates an almost mystical relationship with the earth. From this intimate connection comes his Marguet Ambonnay Grand Cru Brut Nature, a cuvée without concessions, without artifice, without make-up. A wine that does not seek to please everyone, but rather to speak with a clear voice of the place it comes from. The project, the result of a radical decision - to completely eliminate the addition of sulphites (0 mg/l SO₂) and to work without dosage - represents the culmination of a deeply rooted biodynamic philosophy. Here, Pinot Noir (58%) and Chardonnay (42%) vines, grown in one of the most prestigious grands crus of the Montagne de Reims, offer their unfiltered essence. Production is limited to 2,160 bottles, a testimony to extreme care and absolute respect for the vineyard.

Winemaking

The grapes for Marguet Ambonnay Grand Cru Brut Nature are harvested by hand and vinified separately in small neutral barrels, fermenting spontaneously with indigenous yeasts. No sulphur is added at any stage. Malolactic fermentation takes place naturally, and the wine rests on its fine lees for five years until bottling, without fining or filtering. Each step - from gentle pressing to disgorging - is carried out according to the rhythms of the biodynamic calendar, with meticulous attention to detail. The exclusive use of gravitational methods in the cellar and the total absence of dosage result in a pure, crisp expression, deeply connected to the chalky soil of Ambonnay.

Taste

On the nose, Marguet Ambonnay Grand Cru Brut Nature unfolds with millimetric precision: notes of green apple, citrus peel, wet chalk and sourdough bread intertwine with an electric minerality. On the palate, the attack is direct, cutting, with a very fine effervescence that accentuates the wine's tension. The structure is firm but elegant, supported by a vibrant acidity that cleanses the palate and lengthens the finish. Hints of candied lemon, fleur de sel, raw almond and a faint spicy echo. A wine for purists, for those seeking mineral excitement and absolute precision.
