Réserve d'O Rouge is the founding cuvée and reflects the authenticity of the Terrasses du Larzac terroir. It is a wine that captures the essence of a unique terroir, each bottle bearing the unmistakable signature of its origin.

Winemaking

Made in the prestigious Terrasses du Larzac protected designation of origin, this wine is a testament to the excellence and diversity of one of France's most outstanding wine regions. Its blend is composed of 45% Grenache, 45% Syrah and 10% Cinsault, creating a perfect balance that highlights the richness and complexity of each variety.
Grown in stony clay-limestone soils at an altitude of 400 metres, this wine expresses a mineral personality and elegance that are a direct reflection of its terroir. With a firm commitment to biodynamic agriculture and manual harvesting, it is a wine that speaks of respect and dedication to the land where it was born.
The production of La Réserve d'O Rouge is an artisanal and meticulous process. Indigenous yeasts are used and a maceration of 25 days is carried out, following a traditional vinification without the use of additives. This approach guarantees the purity and authenticity of the wine. Aged in concrete tanks and amphorae for 16 months, it allows the wine to develop depth and character, while maintaining its freshness and vivacity.
With moderate use of added sulphites at bottling, this wine is presented in its most natural and honest form. In addition, it is certified as an organic wine by ECOCERT and DEMETER, guaranteeing its production under the highest standards of quality and sustainability.

Pairing

La Réserve d'O Rouge is a sublime gastronomic experience. It is the perfect accompaniment to a grilled rack of beef with vine shoots, bringing out the richness of the meat with its structure and fruity notes. It goes exceptionally well with a cep parmentier, where the earthy flavours of the mushrooms are complemented by the complexity of the wine. And for a risotto with roasted pumpkin, rosemary and parmesan, this wine brings the perfect harmony, balancing the creaminess of the risotto with its vibrant acidity and aromatic depth.
