They varietal 2018 La Prohibición, previously a wine not admitted by the DO, is now a full-fledged appellation wine, as the appellation admitted any varietal combination from the allowed grapes, one of them Garnacha Tintorera. It's creamy, spicy and toasty, with some floral notes, powerful but fresh, with 14.5% alcohol. It has a little more oak than I'd have liked, but it's less oaky than in the past, despite the fact that it matured in barrel for 26 months. 6,800 bottles were filled in March 2021.

Description
On the vertiginous slopes of Bierzo, where the vineyard defies gravity and each hundred-year-old vine seems to resist the passage of time, Pittacum gives life to La Prohibición, a pure Garnacha Tintorera, rebellious and deeply tied to its land. This wine is made from old vines grown in goblet-trained vines, planted at high density and worked entirely by hand. Here, the winegrower does not dominate, he listens: he respects the soil, avoids herbicides and lets the indigenous flora regulate the natural balance. He only intervenes when the exact moment, the right time, reveals that the grapes have reached their fullness, loaded with the secrets of the Bierzo terroir.
Winemaking
The grapes for La Prohibición are harvested in small 12 kg boxes, selected bunch by bunch and crushed without destemming, preserving the soul of the Garnacha Tintorera. Fermentation of La Prohibición takes place in small open vats, with manual punching down and gentle pumping over for 12 days. After an additional 15 days of maceration, the wine is briefly transferred to tank and then to new French oak barrels. There it undergoes malolactic fermentation spontaneously with the arrival of good weather, before being aged for 12 months, without racking or manipulation, in the quiet of the cellar. Finally, La Prohibición is bottled unfiltered.
Taste
La Prohibición is intense, dark, with deep aromas of ripe black fruits -blackberries, plums-, graphite, liquorice and a subtle echo of cocoa and blond tobacco. On swirling the glass, nuances of dried rosemary, light smoke and an earthy minerality that speaks of the soil emerge. The palate is firm, ample and structured, with polished tannins and an acidity that adds tension and lengthens the length. The finish is long, spicy, with an aftertaste of black fruit and toasted notes. This is a Bierzo red wine that does not seek to please everyone: it is for those who appreciate character, authenticity and the beauty of the untamed.
