Description

From Arbois, in the heart of the Jura, Alice Bouvot has forged a name for herself in the world of natural wine with her project L'Octavin. Trained in Burgundy and Bordeaux, she decided to go back to basics: farming with absolute respect for the land and winemaking without artifice. In 2005 she founded her winery, and since then she has developed an intimate relationship with her own vineyards and those of like-minded friends. L'Octavin Ganache was born from this philosophy and from his partnership with Claude Ughetto, who grows Garnacha on a small plot in Saint Pierre de Vassols, in Provence, at the foot of Mont Ventoux. There, the poor, stony soil of white marl, under the dry, harsh mistral, produces intense but balanced grapes. Alice's idea: to let the place speak, without filters or embellishments. A risky bet, but a sincere one.

Winemaking

L'Octavin Ganache is made in Alice's cellar, with minimal intervention and a free spirit. The grapes are vinified with whole bunches for three weeks, in a spontaneous maceration with no temperature control, no added yeasts and no chaptalisation. The wine is then aged in inert tanks, where it rests until it is bottled in June. Nothing is filtered, nothing is corrected, nothing is protected with SO₂. It is a "pur jus" wine, as she herself defines it: pure Garnacha juice.

Taste

L'Octavin Ganache offers an unexpected expression of Garnacha: lighter, more aerial, almost volatile. The nose displays fresh red fruit -cherry , raspberry, redcurrant-, wrapped in a slightly herbal and spicy veil, with notes of white pepper and a slight hint of bitter cocoa. The palate is juicy, dry, with smooth tannins and a fluid texture. The vibrant acidity cleanses the palate and gives way to a fresh finish, with a mineral and slightly earthy note. It has that free-flowing character typical of natural wines: as it opens up, it gains complexity and depth. Some acidic notes peek through at first, but integrate with the air. It is a wine of thirst, but with soul. Pure expression of place and conviction. One of those wines that don't shout, but say a lot if you listen to them.
