Description
Some wines are born of the land and others are born of daring. L'Octavin Cigogne belongs to both worlds. It is the result of an unconventional collaboration between Alice Bouvot - a central figure of the natural movement in the Jura - and the mythical biodynamic vineyards of the Humbrecht family in Alsace. The idea: to unite two aromatic varieties, Gewürztraminer and Pinot Gris, cultivated under rigorous practices of respect for the land, to let them speak without filters.
Winemaking
The grapes are harvested by hand, selecting only healthy bunches. The grapes destined for L'Octavin Cigogne, without destemming, are placed in tanks where they ferment for five weeks with indigenous yeasts. This long carbonic maceration allows the extraction of deep aromas and a subtly tannic texture, very unusual for whites. The wine is then gently pressed and transferred to inert tanks (fibre or stainless steel) where it remains without intervention until the following spring. No fining, no filtering, no added sulphites. This is how it is bottled, raw and vibrant, a direct reflection of the vineyard and the gesture of the person who interprets it.
Taste
On the nose, L'Octavin Cigogne unfolds with layers of candied orange, dried rose, mild curry and a herbal nuance reminiscent of hay in the sun. This is not a shy wine, but neither does it fall into the trap of exuberance: its floral and spicy notes are well supported by a backbone of freshness and an elegant bitterness that lends precision. The palate is textural, with very fine tannins and a citrus tension that refreshes. There is some red tea, grapefruit peel, rhubarb, and even a mineral echo that crackles on the finish like wet gravel. The fruity notes - ripe citrus, dried apricot - appear restrained, balanced by that subtle bitterness that cleanses and lengthens the finish.
L'Octavin Cigogne is not for everyone. It is for those who enjoy lively acidity, expression without make-up. A bottle that feels more alive than crafted, more spoken than designed. Wild, precise, profoundly honest.
