Winemaking
Chevreux-Bournazel La Parcelle Zéro Dosage is made mainly from Pinot Meunier and Chardonnay grapes, carefully selected from vineyards located in the Marne Valley. These grapes come from a single vineyard in Connigis, which gives the wine a distinctive identity. Harvesting is done by hand during the cool morning hours, ensuring that only fully ripe grapes are selected. After gentle pressing, the must ferments spontaneously in used oak barrels. This natural fermentation process, together with a 9-month ageing in the same barrels, contributes to the complexity and depth of the wine. In addition, the wine does not undergo malolactic fermentation and maintains a low level of SO2, which preserves its freshness and purity.
