There are notes of strawberry and plums in the red 2021 Bimbache Tinto that are intermixed with herbal notes of fig leaves. It's a blend of varieties and zones, with a characterful nose and a more austere palate with very fine tannins. Time in bottle makes them better. It was bottled in May 2022.

Description

Bimbache Tinto is a wine that comes from the sunny and semi-arid southern part of El Hierro. This region is characterised by its mixed soils of volcanic sands, ashes and clay. These traditionally planted vineyards are home to probably dozens of varieties that end up in the blend. However, the majority is Listán Negro, complemented by small amounts of Vijariego Negro and Listán Prieto.

Winemaking

Fermentation is carried out with indigenous yeasts in stainless steel tanks with no temperature control and a maceration of two weeks. The wine then rests in stainless steel for 12 months and is bottled without fining or filtering.

Taste

Bimbache Tinto has a raw style, with aromas that evoke the character of the island, particularly its volcanic soils(sulphur and cider), as well as red fruits and pepper. On the palate, it is perceived as an elegant and biting wine, with beautiful acids that bring refinement.
