Description
Billaud Simon Chablis is a classic wine from the Chablis region, made entirely from Chardonnay grapes. This wine benefits from a continental climate that allows for optimal ripening of the grapes while maintaining a vibrant acidity. The vineyards are planted on Kimméridgien type soils and extend over an area of 3,256 hectares with south-east and south-west orientations.
Winemaking
The grapes are harvested by hand and carefully selected. Vinification includes gentle pneumatic pressing and natural fermentation in stainless steel tanks. The wine is aged for 8-10 months in these tanks to preserve its freshness and minerality, followed by bottling in the spring.
Taste
Billaud Simon Chablis has a beautiful golden hue with green highlights. On the nose, it offers seductive aromas of vineyard peach, banana, citrus and brioche. The palate is balanced, rich, fresh and elegant, with a smooth structure that lingers on the palate. Ripe fruits combine harmoniously with mineral notes, offering a smooth mouthfeel. This wine has a light acidity and a long finish with creamy notes. It is ideal for pairing with red tuna tartar, baked salmon en papillon, crab and shellfish.
