The eponymous red 2021 Acústic has plenty of notes of honey, beeswax and pollen that I often find in Mediterranean reds, intermixed with notes of cocoa powder and ripe berry fruit. It was produced with 87% Cariñena and 13% Garnacha and has high ripeness (15% alcohol) but good freshness, coming through as powerful and concentrated with power and abundant tannins. It is a powerful red matured in used and second-wine barrels for one year. 80,445 bottles produced. It was bottled in March and April 2022.

Description
Acústic red wine is an authentic expression of the winemaking tradition, rooted in the wisdom of ancient vineyards and the ancestral knowledge of winegrowers. This wine, which confronts globalisation with a firm commitment to the autochthonous, is a tribute to traditional viticulture, without make-up or excessive technology.
Acústic is made from old noble Garnacha and Cariñena vines, located in the Montsant Denomination of Origin. These vines, between 35 and 65 years old, are located in poor, arid soils, with a mixture of clay, sand and pebbles, at altitudes of between 300 and 700 metres. The combination of 30% Garnacha, which contributes finesse, fruit and femininity, and 70% Cariñena, which contributes colour, structure and masculinity, results in a wine of unique character.
Winemaking
Acústic is made with a deep respect for the grapes, seeking the maximum expressiveness of these native varieties. The process includes a maceration of 10 to 15 days, followed by malolactic fermentation and ageing in lightly toasted first and second use French oak barrels for 10 to 11 months. This carefully selected ageing method ensures that the wine retains its purest identity, as it is neither filtered nor clarified.
Taste
Acústic is characterised by being a balanced and pure wine, which faithfully reflects the character of the vineyard. Its taste profile is fruity and juicy, with an acoustic and unplugged touch that evokes the essence of the land. In the glass, it has a cherry colour with a violet rim. On the nose, aromas of red fruit and violets, accompanied by notes of herbs and spices. On the palate, the wine is savoury, full and complex, offering a poetry of finesse and elegance that delights the most demanding palates.
