Description
Serragghia Onda wine is an authentic expression of the island of Pantelleria, located in the region of Sicily, Italy. This island, known for its volcanic and sandy soils, is home to vineyards with an average age of 40 years, which give life to this exceptional wine. Produced exclusively with the Syrah grape variety, which is grown in a 5 hectare vineyard under biodynamic practices certified by Demeter.
Winemaking
After manual harvesting, the grapes are destemmed and gently pressed. Fermentation is spontaneous with indigenous yeasts and takes place in buried terracotta amphorae , an ancestral technique that allows for prolonged maceration and enhances the natural characteristics of the grapes. The wine is aged for 7 months in these same amphorae, without any clarification, filtering or addition of sulphur. The result is a pure wine, with no additives and an alcohol content of 13%.
Taste
Serragghia Onda has the characteristic notes of Syrah grown in volcanic soils. The influence of the Pantelleria terroir manifests itself in deep and complex flavours, with a distinctive minerality and a perfect balance between acidity and fruitiness. The amphora vinification techniques bring earthy nuances and a silky texture, making this wine a unique sensory experience.
