Winemaking
Les Vignes de L'Ange Vin Bistrologie is a single varietal wine made from Chenin Blanc, grown and harvested under artisanal techniques that follow the philosophy of the winery of origin, where the minimum intervention of chemical elements or any procedure that may alter the natural expression of the fruit is ensured.
The fermentation phase is carried out spontaneously, using indigenous yeasts. The wine is then aged for 15 months in French oak vats.
Finally, the wine is bottled without filtering or fining, avoiding the addition of sulphites that could alter the natural flavour that defines it.
