Description

Pheasant's Tears Saperavi is a wine from the Kakheti region of eastern Georgia.
The Pheasant's Tears estate vineyard stretches across the slopes of the Georgian province of Kiziqi, overlooking the Alazani Valley and the snow-capped Caucasus Mountains. The terroir of this region is special, benefiting from more than 14 hours of sunlight during the summer and cool nights thanks to the breeze from the gorge. The soil is composed of limestone, chalk and dark clay on the surface, while at a depth of one metre there is a sandy silt mixed with gravel, which provides excellent drainage for the root systems of the vines.

Elaboration

Winemaker Gela Patalashvili, raised in a farming family, learned from his grandparents and parents how to grow grapes and make wine in qvevri. The qvevri were the first vessels used for fermenting wine, with archaeological finds dating back to 6000 BC. These are clay vessels lined with beeswax and completely buried underground, where the temperature remains constant throughout the year. Some of Pheasant's Tears qvevri date back to the mid-19th century. The winery is built in the vineyard itself to minimise damage to the grapes during transport. Following traditional Georgian methods, the ripest stems are added to the skins, juice and pips of the grapes for both reds and whites. The maceration time varies from 3 weeks to 6 months, depending on the variety and size of the qvevri.

Taste

This wine variety, Saperavi, is known for its deep red colour, which is sometimes so dark that in Georgian it is called black. Its taste and appearance vary considerably depending on the terroir in which it is grown. The Saperavi from Pheasant's Tears estate is a bold, earthy, dry red wine with flavours of blackcurrant and toasted almond, accompanied by a natural, elegant tannic structure.
