Description
Ratapoil Chamoz was born out of the non-conformist vision of Raphaël Monnier, a Jura winemaker who views the vineyard as a living organism rather than merely a crop. His project, approached with biodynamic sensitivity and an almost defiant freedom, is based on a very clear idea: not to tame the landscape, but to bottle it. Ratapoil Chamoz is a pure expression of that philosophy, a Savagnin white that does not seek to please with exuberance, but to move the drinker through the tension, depth and authenticity of the terroir. In a region of cool climate, fierce tradition and calcareous, clayey soils, Monnier is committed to a Jura white wine that preserves the landscape’s mineral character intact. There is something courageous about this choice, for here the aim is not easy fruit or immediate seduction, but character, salinity and that noble austerity which distinguishes the great wines of the Jura.
Winemaking
The winemaking process for Ratapoil Chamoz is as precise as it is non-interventionist. The Savagnin grapes arrive at the winery and are processed by direct pressing to preserve purity, sharpness and clarity. Fermentation takes place naturally, without artificial intervention, and the wine is aged for around twelve months in used French oak barrels. This old wood is not intended to impart aroma or soften the wine, but rather to provide breathing space, structure and texture. The wine is then bottled without added sulphites, reinforcing that sense of authenticity and vibrant energy. Every aspect of this process seems geared towards a single goal: to let the grape variety and the terroir speak for themselves with as little interference as possible.
Flavour
On the nose, Ratapoil Chamoz does not make an aromatic splash, but rather offers a quiet, stony depth. Notes of citrus peel, dried white fruit, delicate herbs, almond and damp stone emerge, all enveloped in a beautiful austerity. On the palate, it really comes into its own: the acidity cuts across the palate with almost razor-sharp precision, whilst the texture displays fibrous volume, rigour and a minerality that dominates the finish. The finish is long, salty, spicy and chalky, with a persistence that leaves the impression of having bitten straight into the landscape. A vibrant and deeply expressive white wine, perfect for dining.
