The Domaine de Majas winery is located in the surroundings of Caudiès Fenouillèdes, covering an extension of more than 30 hectares of land, which in turn make up several vineyards with peculiar meadows and woods, converging in a beautiful natural landscape.
This winery is located between 350 and 400 metres above sea level, where the Mediterranean sea breeze is present with its humidity, influencing the characteristic taste of the harvested grapes.
The climatic conditions of this place are very particular, not only because of the intense summers but also because the winter is present in all its splendour.

Caudiès de Fenouillèdes, Roussillon Alain Carrère and his wife are the founders of the Domaine De Majas winery. The story begins in 1992, when the wine production was focused on the large-scale distribution of several copies.
However, years later they teamed up with Tom Lubbe from Matassa, a New Zealander who had lived in South Africa all his life as a major wine producer in the 1990s, and who at that time proposed to make some changes in the winemaking process.
The first thing they did was to green all the winemaking processes in 2007, with minimal intervention with the fruit, but with 100% respect for the environment in which it is grown.
In addition, they implemented the use of indigenous yeasts for vinification, thus guaranteeing the maximum expression of the fruit and obtaining textures that classify the wines as crisp and sparkling.
Techniques used
As we mentioned before, this winery maintains the philosophy of naturalness in the elaboration of its wines, as it is a way to enhance the original expression of the fruit.
Thus, in 2007, this winery converted its vineyards to organic viticulture practices, which not only responded to the need to produce natural wines, but also to turn them into unique examples that express in their flavour the particularity of their grapes and the benefits of the proximity to the Mediterranean.
Under the leadership of the South African oenologist Tom Lubbe, techniques with minimum interventionism were established, ensuring that fermentation is spontaneous and that the vinification process does not include wooden barrels for ageing.
The grapes are also harvested by hand, thus guaranteeing that the fruit has the optimum ripeness to obtain wines with fresh tones.
Vineyards
The soils of these vineyards are clay-limestone soils, which is considered a determining factor in the cultivation of the fruit, as they are capable of retaining a greater amount of water and nutrients, which has a positive impact on the grapes.
In these vineyards there are still vines of more than 120 years old of the Cariñena, Garnacha and Macabeo grape types, used in the production of different wines.
However, they have also rescued new grape varieties such as Syrah, Merlot, Cabernet, Chardonnay and Rolle, which determine the particularity of many wines.
