Vineyards

The terroir in this region is complex and diverse. The Côte de Brouilly, in particular, is known for its blue granite volcanic soils, which bring a characteristic minerality to the wines. Elsewhere on the property, the soil includes sands and clays, which contribute to the varied expression of the winery's wines. All Bonnet-Cotton cuvées come from parcel selections, which means that the grapes from each parcel are vinified separately to preserve the unique characteristics of each terroir.
In terms of vinification, the winery follows a minimalist approach. They use techniques such as carbonic maceration, a technique typical of the Beaujolais region, which allows them to extract fresh, fruity flavours from the grapes without the need for long fermentations. In addition, only indigenous yeasts are used, i.e. those naturally present in the grapes and the environment, which reinforces the sense of place in each wine.
As for the use of sulphites, Bonnet-Cotton takes a very limited approach. They do not add sulphites to most of their wines, except on exceptional occasions, which allows them to produce wines that are as natural as possible, without compromising the stability of the product. This philosophy is in line with the natural wine movement, which seeks to intervene as little as possible in the winemaking process, allowing the wine to express itself authentically.
The wines are aged in foudres (large wooden barrels) or cement vats for a period of 6 to 12 months, which provides gentle oxygenation without imparting overpowering wood flavours. After ageing, the wines are bottled without fining or filtration, to preserve all their purity and character.
Bonnet-Cotton' s philosophy also embraces a certain creativity and freedom in winemaking. Although they mainly produce crus from the Beaujolais region, they also make vins de France, a category that allows them to experiment with new methods and grape varieties.
