An exciting story of discovery and exploration
One day, a family of sommeliers and oenology enthusiasts got together in 2007 to make a couple of barrels in their grandfather's field.
To everyone's surprise, the wine was exceptional. He made such wonderful wines that they couldn't resist starting this spectacular personal project.
Location
Bodegas Cueva is located in the heart of the Utiel-Requena region in the centre of the village of La Portera. The place it occupies is a peculiar construction of the XVIII century destined for the elaboration of natural and artisan wine during all its time of existence.
The winery is under the Utiel-Requena Denomination of Origin and is currently authorised and stamped by the Organic Agriculture Committee of the Valencian Community.
Respect for the environment, biodiversity and health.
At Bodegas Cueva only organically grown grapes are used. Mariano, as an oenologist with a great creative capacity, knows the grapes and the artisan methods to perfection, which allows him to extract the essence of the Mediterranean sea and turn it into magnificent wines.
Mariano follows the natural winemaking method, without filtering or treatment, in perfect combination with the latest technological innovations for the preservation, bottling and labelling of the natural products that come out of Bodegas Cueva.
There are more than 200 square metres of ageing cellars, which give their wines the rest and the right temperature, transforming them into quiet and exclusive wines.
Vineyards
Bodegas Cueva currently works with 10 hectares of vineyards. Half of these hectares are their own and the rest come from experienced winegrowers in the region from whom they acquire the grapes.
They work closely with these growers throughout the year to guarantee the best possible quality, always maintaining a great respect and commitment to the environment.
Mariano fully believes in the need to accompany the wine in all its processes, and in an artisanal and natural method in its production. For this reason, he avoids the addition of additives as much as possible.
Consequently, as a result of the methods applied and the passion for good work both in the vineyard and in the winery, his wines are pure terroir, in perfect harmony with the maximum expression of the character of the varieties that are used and have been recovered.
Varieties
To this passion for the production of quality wine, we can add the tireless recovery of native varieties that are practically extinct, such as the Tardana or Pintaillo. The development of other more widespread grapes grown on old vines, such as Bobal, has also been important, which is the reason why the wines of this winery are exceptional.
Tempranillo, Bobal, which is the grape with the most antioxidant properties, and Tardana, which ripens late, are ideal for making sparkling wines with low alcohol content.
Tasting any of the Bodega Cueva wines is like rediscovering wine, or simply discovering it.
