On the Montgueux hill, a terroir that until recently was underestimated, Emmanuel Lassaigne has taken the family heritage to a whole new dimension. What started as a small production in the hands of his father Jacques has today become one of the most exciting references in the region. With just 4.7 hectares of his own vineyards and the meticulous control of additional small plots, Emmanuel has shown that great Champagne is not only born in the Côte des Blancs or in the chalky soils of Reims and Aÿ, but also in this oasis of pure chalk in the south of the appellation.
Montgueux - The Montrachet de la Champagne
If ever there was a misunderstood terroir, it was Montgueux. For decades, this lonely hill outside Troyes was ignored in favour of the classic Champagne enclaves. But nature is generous here: pure Kimmeridgian limestone soils, ideal sun exposures and a Chardonnay that displays an uncommon aromatic richness. Emmanuel Lassaigne not only rediscovered this terroir, but elevated it to a status that is now celebrated by sommeliers and wine lovers around the world. No wonder the legendary Anselme Selosse dubbed it "the Montrachet of Champagne ".
Champagnes that capture the essence of the land
For Lassaigne, the vineyard is sacred. Viticulture here is carried out with absolute respect for nature: no herbicides, no pesticides, organic and biodynamic treatments according to the needs of each vintage. But where this house really distinguishes itself is in its winemaking philosophy. Emmanuel rejects the typical Champagne blend and prefers to make each wine with grapes from a single vintage and, in many cases, from a single plot. The result? Champagnes of astonishing purity, where the vineyard speaks without interference.
Fermentation is carried out with indigenous yeasts and in stainless steel tanks, although some cuvées are aged in used oak barrels to add complexity without masking the wine's identity. Malolactic fermentation is allowed or not according to the natural expression of each vintage, without dogmatic impositions. Crucially, all Lassaigne Champagnes are bottled without filtration or fining, at extremely low doses or, in most cases, without any added sugar (Brut Nature).
