Domaine de la Cras, located in Plombières-lès-Dijon, west of the city of Dijon in Burgundy, is a wine jewel that has been revived thanks to the efforts and vision of the talented Marc Soyard. The winery covers an agricultural property of 160 hectares, of which 8 hectares are planted with vines, distributed into 5 hectares of red grapes and 3 hectares of white grapes.
Before taking on the challenge at Domaine de la Cras, Marc gained valuable experience at the prestigious Domaine Bizot in Vosne-Romanée, where he worked for six years as head winemaker under Jean-Yves Bizot. Here, he learned natural winemaking practices and the importance of organic vineyard management, principles that he has brought to his own project at Domaine de la Cras since 2014.
Vineyards
The vineyards of Domaine de la Cras benefit from a unique terroir, characterised by calcareous and calcareous-clay soils, typical of the Burgundy region. The altitude and exposure of the vines play a crucial role in the character of the wines produced here. The steeper and better exposed plots are destined for the "Cras" cuvées, while the lower altitude plots produce the "Coteaux" cuvées.
The climate in Plombières-lès-Dijon is continental, with cold winters and warm summers, which favours the optimal development of the Chardonnay and Pinot Noir grape varieties grown in the winery. This microclimate, combined with organic and in some cases biodynamic farming practices since 2016, enables Marc Soyard to produce wines that authentically reflect their terroir.
Philosophy
Marc Soyard 's philosophy at Domaine de la Cras is based on a minimal intervention approach in both the vineyard and the winery. As he himself states: "In the vineyards and in the cellar, I let things happen naturally, my philosophy is to intervene as little as possible". This respectful and sustainable approach translates into practices such as the use of indigenous yeasts, vinification without added sulphur and ageing in a combination of new and used barrels, including experiments with woods such as chestnut and acacia.
Marc's aim is for each wine to be a unique expression of its terroir, which he achieves by avoiding the use of oenological products outside the wine, except for small doses of sulphur when strictly necessary. The winery also distinguishes itself by being the only one to use the Coteaux de Dijon designation, a recognition of the uniqueness and quality of its vineyards.
The winemaking at Domaine de la Cras follows traditional techniques combined with innovations that respect the natural environment. The grapes are harvested by hand and fermentation in the cellar is carried out with natural yeasts.
