Located in the picturesque village of Cramansin the far north of the Jura, Domaine des Cavarodes is a winery that, in less than two decades, has managed to position itself as an undisputed reference for natural wine. At the helm of this exciting project is Etienne Thiebaud, a winemaker whose philosophy of minimal intervention and absolute respect for nature has resulted in vibrant, deeply expressive wines of unquestionable authenticity.
A History Forged in Tradition and the Land
Etienne Thiebaud's journey in the world of wine began with his work at Domaine de la Tournelle, where he imbibed the meticulousness and respect for terroir that characterise the great producers of the Jura. Wishing to realise his vision, he founded Domaine des Cavarodes in 2007, acquiring historic vineyards around Cramans and in the prestigious Arbois appellation. Some of his plots have vines between 60 and 120 years old, with rare varieties that further enrich his extraordinary viticultural heritage.
Organic and Biodynamic Viticulture - A Commitment to the Terroir
From the outset, Thiebaud has been committed to organic viticulture, completely dispensing with herbicides, pesticides and synthetic fertilisers. It is currently in the process of converting to biodynamics, applying natural treatments and respecting the lunar rhythms to enhance the vitality of the soil and the vines. Every intervention in the vineyard is carried out with the aim of preserving biodiversity and allowing the vines to reflect the character of their soils with total transparency.
Emblematic Plots and Native Varieties
Domaine des Cavarodes has 4.5 hectares of vineyards spread over different plots, each with its own geological and climatic identity. Among the most outstanding are Lumachelles, in Mouchard, where Chardonnay, Poulsard, Pinot Noir and Trousseau coexist; Guille Bouton, in Arbois, which is home to pure Chardonnay of exceptional minerality; and Les Messagelins, also in Arbois, dominated by Trousseau and characterised by its elegance and spicy notes.
Thiebaud also works with forgotten varieties such as Pinot Meunier, Argant, Portugais Bleu, Enfariné and Mézy, contributing to the recovery of a valuable genetic heritage of the Jura.
Vinification - Purity and Unadulterated Expression
In the cellar, intervention is minimal, allowing the grapes and the terroir to express themselves without artificial interference. The reds are made by semi-carbonic maceration, with minimal addition of sulphites and ageing in neutral barrels and foudres, while the whites ferment spontaneously with indigenous yeasts and are aged in large oak foudres. Each wine turns out to be a pure reflection of the vineyard of origin, with an aromatic intensity and vibrant structure that capture the essence of the Jura.
