Renowned for his vibrant and precise Champagnes, Emmanuel has decided to take a break from the effervescence and give voice to silence: a white Coteaux Champenois that is, above all, a manifesto of purity. The Jacques Lassaigne Coteaux Champenois Haut Revers Du Chutat vineyard, planted in 1968, offers Chardonnay of unusual depth, shaped by decades of roots that dialogue with the active limestone of the subsoil. The result is a wine that is calm not by necessity, but by conviction.
Winemaking
The grapes are harvested by hand, with an almost surgical approach. Once in the cellar, the grapes that will give life to Jacques Lassaigne Coteaux Champenois Haut Revers Du Chutat are completely destemmed and pressed with extreme gentleness, extracting only the cleanest must. Fermentation starts spontaneously, without additives, respecting the natural pulse of the wine. The wine then rests for two years on fine lees, in a neutral oak foudre, with no lees stirring, no fining, no filtration and no sulphur added. This long, hands-off ageing allows the wine to express itself with radical clarity, as if it were speaking directly from the stone.
