Description
On the little-known slopes of Montgueux, in southern Champagne, Emmanuel Lassaigne inherited from his father Jacques Lassaigne not only vines, but a way of looking at the land with an almost mystical respect. It was there, on chalky soils and pure chalk, that he decided to give life to an unusual version of his line: Jacques Lassaigne Demi-Sec, a semi-dry wine that would not betray the mineral identity of its terroir. The challenge: to preserve purity and tension, yet with a touch of sweetness. The solution? To let the Chardonnay - the only variety in this cuvée - speak clearly, even with a generous dose of residual sugar. Emmanuel, faithful to the minimum intervention, cultivates without herbicides or synthetic products, letting the soil mark the character of the wine, without make-up or shortcuts.
Winemaking
The grapes are harvested by hand, carefully and gently pressed so as not to damage the varietal expression. Fermentations are carried out with indigenous yeasts, without additives, respecting the rhythm of each tank. Part of the must ferments in used oak barrels and another part in stainless steel, which provides a double dimension: tension and volume. The wine then rests on fine lees for 12 to 24 months before bottling and a second ageing in the bottle. Disgorgement is carried out by hand and the dosage - around 45 g/L - makes this Blanc de Blancs an elegant demi-sec, not cloying. Each step in the making of Jacques Lassaigne Demi-Sec seeks to preserve the vibrant energy of the Chardonnay, even in a gentler version.
Taste
The nose of Jacques Lassaigne Demi-Sec is generous but precise: aromas of golden brioche, wild honey and candied white fruit intertwine with hints of citrus and a distinct chalky salinity. The palate is seductive, with a sweet attack that never overpowers, thanks to a firm acidity that cleanses and stylises. Notes of mango, caramelised lemon peel and hints of almond cream envelop the palate with smooth texture, without losing freshness. The finish is long, slightly saline, with a lingering minerality that recalls wet chalk and balances the sweetness.
Jacques Lassaigne Demi-Sec is an unconventional Champagne, ideal for foie gras, Asian cuisine or even as an unexpected companion to blue cheeses. Sweet, yes - but never submissive.
